Light version of CZ "candle sauce" with chickpea pasta

Today's recipe has its origins in Czech traditional "candle soup" and was created by chance. :D Probably everyone knows that, right? When you consume leftovers at magic happens based on what you find.

What do we need?

For 4 servings:

- 1 pack of frozen vegetable mix (carrots, celery, parsley)

- 3 chicken breasts (approx. 500g)

- 1 pack of pasta ( I used chickpea ones from Lidl)

- 2 tbs cream cheese light

- 1 bigger onion

- 2 tbs rapeseed oil

- salt, pepper, grill spices, sweet paprica,  

Directions:

1) Fry the onion in rapeseed oil and the mixture of vegetables - when the vegetables are soft, add chicken breast sprinkled with barbecue spices on both sides. Roast until golden.

2) Sprinkle with sweet pepper and pour hot water (we can add 1/2 beef broth). The water should reach such a height that the vegetables and meat are immersed up to 3/4.

3) Cook for an hour to an hour and a half - we regularly pour water so that there is always enough of it.

4) Carefully remove the meat, add salt, pepper, cream cheese and mix until smooth.

5) In the meantime, cook the pasta according to the instructions.

6) Tear the meat and put it back in the sauce.
